1、食文化英译之困惑Puzzlements in C-E Translation of Food Culture摘要:中国饮食博大精深,承载厚重的历史文化。如何诠释,如何移译,常困扰哪怕是最有经验的业内译者。本文从跨文化交际和接受美学的角度,以菜名、菜料、烹调术、饮食方式入手,勾勒食文化走向世界的艰辛。同时指出,任何一国之食文化乃根治于其深厚民族土壤,其翻译的困惑并不亚于“文学翻译”,没有高低、难易之分,需要译者投身致力。Abstract: As the Chinese food culture bears great cultural and historical profundity, its
2、 interpretation and translation often puzzle even the most experienced hand of translating expertise. Taking a perspective of both cross-cultural communication and receptors theory, this paper elucidates four areas concerned: menu, raw materials, cookery, and way of dining, so as to give full awaren
3、ess of the difficulties in promoting the Chinese food culture onto the global platform. The paper also points out that the food culture of a country is deeply rooted in its centuries-old national culture, the translation of which is by no means inferior to, or less difficult than, that of “literary
4、translation” as claimed by the majority of domestic and overseas translation theorists. One now runs his eyes over three or four pages and does not stumble once without realizing what boulders and clods had once lain there where he now goes along as over a smoothly-planed board. We had to sweat and toil there before we got those boulders so easily. The plowing goes well w
6、hen the field is cleared. Martin Luther (1963) (转引自Katharina Reiss 2004:1)所谓“烹”,就是把东西煮熟,毕竟还是一种低阶段的文化;所谓“调”,就是在烹的同时或烹的基础上调剂它的味道。所以说,“调”使饮食符合人的理想追求和艺术享受,更具文化色彩。经过千年的演变与发展,按各地饮食习惯和食物条件,形成各地不同的风味,即不同的菜系。通常说“八大菜系”:川、鲁、粤、闽、苏、浙、皖、湘;也可分为“四大菜系”:川、鲁、淮、粤。川菜比较接近大众,家常气息较浓,调味多种多样。它刀工精细,色泽鲜丽,其高档菜肴,多能雅俗共赏,如麻婆豆腐也可入席
7、,尤以“色香味俱全”著称于世。古人说:“闻香下马,知味停车”。是谓川菜也。“川菜”译为Sichuan Flavor或Sichuan Dish均不妥,它作为一烹调流派(culinary school),译作Sichuan Cuisine怕应是正选了。如此深刻的食文化,如何诠释,如何移译,常困扰哪怕是最有经验的业内译者。本文以菜名、菜料、烹调术、饮食方式为例,勾勒食文化走向世界的艰辛。1困惑之一:菜名中华菜名久负盛名,别树一帜,另有情趣,从修辞学意义上讲,远非西方菜名能与之媲美。诸如:“龙翔凤舞”、“七星伴月”、“春花秋月”,匠心独具,即便誉为举世无双,亦不为过。1.1菜名面面观川菜中猪蹄不称猪蹄
8、,却称“佛手”,取名者似乎嫌猪傻气了点,需要抬高其身家品位。倘若直译作Buddhas Hand,西方食者顿感茫然;若意译为Pig Foot,中国食文化的命名之道(nomenclature)则丧失殆尽。是为困惑也。我国菜名一般三至五言,四言居多,乃传承“四字格”的行文习惯。然而,其命名常夸大其词,想入非非。诚如法国语言学家葛兰言(Granet)对汉语的评价:“中国人所用的语言,是特别为描绘而造的,不是为分类而造的,那是一种可以抒发特别感情,为诗人或怀古家所设计的语言,而不是为了下定义或判断而设计的语言。”(转引自:贾文波 2000:75)对于这些充满想象、浪漫、夸张的菜名,无论如何困惑,出于跨文
9、教交际活动的需求,即使硬着头皮,还是要译的,至少 Any one who really wants to translate must first of all believe in what he translates. J. J. 12、鸯卷Fried Asparagus Rolls Wrapped with Minced Meat20. 乌龙吐珠Sea Cucumber Stewed with Quail Eggs21. 怀远三绝Local Specialties of Huaiyuan (Sichuan);指冻糕(parfait)、叶儿粑(glutinous rice dumpling wrapped in bamboo leaves)、豆腐帘子(bean curd sheet)1.2菜名的喻意单看上例的一些菜名,食者几乎无法了解菜品的真实面貌。凤尾鱼翅(Phoenix-shaped Shark Fin),并不是指凤尾鱼(
13、anchovy)的鳍,否则真没有吃头了。“凤尾”不过是莴笋,“鱼翅”也仅仅是普通鱼块。在老外看来,“凤”是A bird in Egyptian mythology that lived in the desert for 500 years and then consumed itself by fire, later to rise renewed from its ashes,与“龙”(a mythical monster traditionally represented as a gigantic reptile having a lions claws, the tail of a
14、serpent, wings, and a scaly skin)有密切的联系,这样的菜名是不是有些大惊小怪了呢?这里有一个名与实的问题,是译为Fish Chops with Bamboo Shoots,还是译为Phoenix-shaped Shark Fin,笔者更倾向于前者,因为它更符合英文菜名的习惯。关于川中名肴“锅巴肉片”的菜名,还有一个鲜为人知的故事呢。据说抗战期间,美军在成都有一空军基地,每当完成打击日寇任务归来,均有一道菜品犒劳官兵:先将肉片和其他蔬菜烩好,再将锅巴用菜油酥过,使锅巴上留有微火,盛于大盘中,迅速将烩菜倒在锅巴上,发出“吱吱”,于是便有了“轰炸东京(Bombing
15、Tokyo)这道菜名(现一般译为:Sliced Pork with Crispy Rice)。此典故还是笔者在成都美国领事馆工作期间,文化领事告知的呢。作为跨文化交际现象,进入英语的中国菜名已为数不少,起码省去译者不少麻烦:馄饨wonton soup,炒杂碎(广东小吃,有称炒杂烩菜)chop suey,炒面chow mien,点心dim sum(一种广东传统烹饪,它是由各种食物(包括蒸或油炸丸子)做成的小份),应当说广东菜肴为此贡献最多。可幸的是,老外也开始接受诸如“麻婆豆腐”Mapo Tofu之类的名字了。同样,影响我国烹调业的外来语也有:色拉(又译沙拉)(salad),热狗(hot dog
16、),汉堡包(hamburger),咖喱(curry),布丁(pudding),土司(toast)三明治(sandwich),(苹果)派(apple pie)。菜名英译以“实”代“名”,辅以“移译transference”之法,也许可以部分减少我们的困惑了。2困惑之二:菜料2.1菜料文化概说无论在何处进餐,国外食客首先希望知道吃的是什么,译者责无旁贷。所谓菜料,即指配制菜肴之主料和辅料的统称。从中西文化的比较来看,西方的烹调倾向于科学,多从营养学的角度去考虑菜肴的结构和食品的成分;中国的烹调则倾向于艺术,多从色、香、味去注重菜肴的外部表现,这一切首先从菜料的制备开始。关于菜料的制备分类,般有“红
17、白”两案之说,红案一般指菜料的制备,白案指面食的制备,那么红案和白案怎么用英文表达呢?显然没有现成的对应词。若用cutting board(切肉板)表示“红案”,那么“切蔬菜”呢?更何况还有“菜料的制备工艺”之意未能译出。这便是译语食文化的空缺在作祟了。中国食文化中有相当多的典故、传说,大多涉及菜料的结构和成分。“状元卤味”,其实不过是卤鸡肝和豆干拌食菜品,据说当地一状元发明,以资纪念,遂得名。“八仙过海闹罗汉(鲁菜)”的命名亦出自菜品中的八种配料:鸡脯肉、水发鱼翅、海参、鲍鱼、鱼骨(明骨)、鱼肚、活青虾、火腿。2.2菜料若干详解中国菜名看起来一般不像西方意义上的菜名,一些菜名即使普通中国人,
18、知晓者亦寡,况西人乎。关于福建名肴“佛跳墙”,梁实秋先生在其文佛跳墙中有这样的文字:“佛跳墙的名字好怪。何物美味竟能引得我佛失去定力跳过墙去品尝?我来台湾以前没听说过这一道菜。读者文摘(1993年7月中文版)引载可叵的一篇短文佛跳墙,据她说佛跳墙那东西说来真罪过,全是荤的,又是猪脚,又是鸡,又是海参、蹄筋、炖成一大锅。”其实,“佛跳墙”由鲨鱼翅和鲍鱼及20多种配料精制而成,但若译为skewered fresh scallops marinated with Chinese spices, deep-fried marinated king frog legs and shell fish in
19、 chicken soup(陈忠诚、吴幼娟2001:128),则与西方的菜名相去甚远。有人将其译作Buddha-Jumps-over-the-Wall,但又太不像菜名了,而且要破费周折进行解释。中华名肴“狮子头”一般译为Lions Head Meatball,若用Chimera替代Lions Head,食者恐怕便不敢下嘴了。著名川菜“夫妻肺片”为某夫妻发明,年代和姓氏已无可考,配料为牛羊的内脏切成薄片,以四川特有的香辣佐料拌制而成,但却绝无“肺”物,“内脏”而已。笔者勉强译为:The Couples Delight - Cold Dish of Sliced Cattle Bowels。关于“
